Sponge Cake
Ingredients:
- 1 1/2 cups sugar
- 1/2 cup cold water
- 3 egg yokes
- 3 egg whites
- 2 cups flour
- 1 teaspoon baking powder
Instructions:
- Put the sugar in an earthenware bowl
- Add the cold water and let stand until dissolved
- Beat the egg yokes to a yellow foam and add to the sugar
- Sift together the flour and baking powder and add to mixture
- Stir until the batter is smooth
- Then add whites of eggs beaten stiff and flavor
- Bake in a loaf
Notes:
- This was among my mom's hand written recipies.
- Her notes don't mention what kind of "flavor" but, I guess you could add vanilla or almond extract
- Have you noticed her early recipes don't mention a baking temperature or time. That's because she was cooking in a wood burning kitchen stove and she just "knew" when it was hot enough. Not distracted by TV, she "watched" the cake and took it out when done, without clocking it.
