Rich Spice Cake
Ingredients:
- 2 cups light brown sugar
- 1 cup sour milk
- 2 cups flour
- 1 cup seedless raisins
- 2 egg whites
- 3 egg yokes, well beaten
- 1 1/2 cups melted shorting
- 2 teaspoons cinnamon
- 1 teaspoon ground clove
- 1 teaspoon ground allspice
- 1/2 teaspoon grated nutmeg
- 1 teaspoon baking soda
Instructions:
- Sift and measure flour
- Add all spices and soda
- Resift and set aside
- Cream together the melted shortening and sugar
- To that, mix in the egg yokes
- Add the flour/spice mixture to the liquid mix gradually, adding in the sour milk as you go to make a stiff, smooth batter.
- Beat the egg whites to stiff peaks
- Carefully fold the beaten egg whites into the batter
- Dust the raisins with fine flour and stir them into the batter sufficiently to distribute them throughtout
- Bake in two layers
- Put layers together with soft maple or Caramel Icing with a desirable quantity of chopped nut meats in the filling.
- OR, Bake in loaf, and serve cuts with Caramel or cream sauce, or whipped cream.
