Mette's Æble Tærte (Apple Tart)
Ingredients:
- fresh apples (as many as you need)
- flour
- sugar
- real butter
- fresh, whole milk
- cinnamon
- creme fraiche (or ice cream)
Instructions:
- preheat oven to 200°C (400°F)
- peel, core and thin slice apples to almost fill deep dish pan (round, square, whatever)
- sprinkle some sugar and a little cinnamon over (guess! the first one you make will probably be too sweet, so stop short of what you think you need and remember that part of its name is "Tart")
- pour in a little milk (half an inch or less), and add a few small specks of butter here and there
- topping: in a bowl put as much flour as you think you need to cover the top
say, a quarter to third of an inch thick, or so...weigh the flour and add the same
weight of sugar, and then the same weight of cold butter...cut the three
together until the mix resembles small granduals, say a little larger than rice [Hint: Don't know how much? Start with a cup of flour and that WEIGHT in sugar and butter, then if not enough to cover do it again! Simple. (This is NOT science.)]
- dump the toping on top of the apples and spread around generally evenly
- select heat from bottm of oven only and place creation in oven's middle, until
top is past golden, maybe 30 to 45 minutes
- after removing do NOT scald mouth...instead, exercise patience
- when pie is gone, run 1000 miles
Notes:
- She would often serve this as desert to guest, letting it cook while the the main course was being enjoyed.
She would put it in the oven (and set the timer to 40 minutes) as she took out the main dish (be it lamb, duck, or whatever).
Then, she would take it out of the oven when done and let it cool until the guests were ready for the treat. Serve with
creme fraiche (sour cream) on the side...a generous dollop on top made it sinful.
- This recipe was recalled from memory in the Fall of 2008, as apples laid in the bark yard's grass waiting for Mette's paring knife to rescue them.

a couple of table spoons of flour to 3/4 cup of rolled oats. Goes well with ice cream..... (add a few extra miles for the ice cream)
