Next I want to share something I found a couple of months ago, forgotten in one of my cookbooks . . . a few pieces of paper containing my notes for Thanksgiving Dinner 1995 . . . it listed the menu for the meal I prepared for my Danish family . . . they had heard of Thanksgiving, but had never had such a meal before:
Roasted Turkey
Stuffed with Wild Rice, Apples & Raisins
Cornbread Sage Dressing
Mashed Potatoes
Carrot & Raisin Salad
Creamed Peas
Whole Kernel Sweet Corn with Bacon
Giblet Gravy
Whole Berry Cranberry Sauce
Red & White Wine
Mette's AppleKage
Coffee
Chocolate Mints
Friendship
The last piece of paper concluded with why I was thankful.
I guess I should mention:
- My neighbor's house is a half-timber dwelling with a thatched roof. It was probably built in the 1800s, maybe in the late 1700s. Plenty of time for all kinds of seeds to be deposited there by birds while standing on the peak, looking around and singing those songs . . .
- Mette is a common lady's name in Denmark. And, it is my wife's name.
- Grønvej 4, is the address of the house I live in.
- "Skagen guld" is a particular happy and alive, but not too bright, shade of yellow . . . which is the color of our house. We finally got it painted this summer.

Singing birds wake me.
Sometimes it's a cow or a tractor.
Emergency sirens are seldom, almost never, heard.
Mette is not afraid to walk alone.
Neither am I.
I don't own a gun.
Grønvej 4 will be Skagen guld, someday.
The neighbor's roof needs to be mowed.
It never will be.
I love.
I need love.
I know I'm loved.
A good dog is "man's best friend".
Molly is a very good dog.
My best friend is Mette.
Bosnia is the closest war.
Peace in Bosnia seems near.
I may never be "combat ready" again.
The list is much longer.
